Can chocolate without cocoa look – and taste – like real chocolate?
With “ChoViva”, Planet A Foods has developed an innovative, sustainable alternative that not only tastes good, but also looks good. In addition to the sensory properties of texture and taste, the typical chocolate color is also decisive for customer acceptance.
As “ChoViva” does not use cocoa beans, the color is created using roasted grape seed flour – a by-product of wine production. The problem is that this flour is very dark and subtle differences in color are barely visible to the eye. This is exactly where ColorFlex from HunterLab comes into play.
It measures each batch precisely and objectively – even when human eyes reach their limits. If the color is too light or too dark, the degree of roasting of the grape seed flour can be adjusted immediately. This produces a stable, reproducible color result that meets consumer expectations.
The ColorFlex can be easily integrated into the production process: The sample is filled into a Petri dish or glass cuvette, placed on the measuring opening – all it takes is the push of a button. The deviation from the target value appears immediately on the display. Whether laboratory or production – quality assurance can be that simple.
