Color measurement of butter
Intense golden yellow or rather white, butter can have different shades of color depending on whether the cows whose milk was used to make the butter were fed grass or hay. In addition, colorants such as beta-carotene, curcuma and other additives also play a role in the preparation of butter today. In any case, the consumer knows how he likes “his” butter best and trusts that he will always receive the same product that complies with food standards.
Butter and butter preparations such as clarified butter, ghee or nut butter are, like all spreadable fats, opaque in the solid state and are therefore measured in reflection. A spectrophotometer with reflection mode measures 45°/0° in geometry and thus reproduces the color impression that corresponds to the human eye.

The task The consistency of butter does not allow it to be simply placed on an aperture for color measurement, as this would contaminate the sensitive measuring device. For this reason, it is often laboriously coated in measuring cuvettes for color measurement, which have to be laboriously cleaned again after the measurement.
