Can chocolate without cocoa look - and taste - like real chocolate? With "ChoViva", Planet A Foods has developed an innovative, sustainable alternative that not only tastes good, but also looks good. In addition to the sensory properties of texture and taste, the typical chocolate color is also decisive for customer acceptance. As "ChoViva" does not use cocoa beans, the color is created using roasted grape seed flour - a by-product of wine production. The problem is that this flour is very dark and subtle differences in color are barely visible to the eye. This is exactly where ColorFlex from HunterLab comes into play.
